Q: Can I use this to sieve flour?

No, honestly this is no good as a sieve. It Is quite small and the holes are too large - it is perfect for dredging flour over the table area on which you are going to roll out your pastry, much better than keep having to dip pastry covered fingers into the flour bag to grab handfuls. It is also good for sprinkling icing sugar, sugar or chocolate etc over your baking etc. For 'sieving' flour you have to have very fine mesh holes which will enable the flour to fall as finely as possible and thereby trap as much air as possible as it falls into the bowl - any unwanted lumpy bits are held back.

Q: Do you have to twist or pull the lid to open it?

Hi, this is a twist lid. Its a hard plastic container with a handle and a screw lid. Ok for flouring pastry for rolling out, but no good for sprinkling cocoa over chocolate etc.

Large enough for shaking cornflour or iceing sugar

Not sure about weight wise but it holds a good 4 very full tablespoons of flour.
